I get that, one perk of being the person to make the meal, I get to tweak it the way I want. I did a brisket instead of turkey this year, and am firmly in the camp of that was a great call.
The effort to rewards on turkey isn’t very good. I did a sous vide on the brisket for 40 hours at 125, then cool it and dry it, just to start the smoke at 200 for about 3-4 hours, to an internal temp of 140. I will probably do a full tri-tip at Christmas too.

I ain’t never gonna complain about having brisket on my plate, but the Mrs is doing the 48 hr dry brine on our turkey, then she’s going to rub salted butter under its skin before she roasts it
