I was wondering if an hdmi splitter with an optical out would degrade the sound quality?

Most likely not, there is a chance it could add noticeable jitter but I think you would be fine

One issue with these types of things is that they don’t always pass audio sampling rates above 48khz. If your use case includes listening to 88.2khz or higher audio files that may be an issue.
This one is only 1080p60 but outputs 192khz through optical and coax!
