Fried haddock (sumac, lemon, dill rub) with provolone, rosemary, garden greens, kelp kimchi, and toasted buttered brioche.
Ugly af, but I might actually die this is so good. Will be making again.
I kinda fucked up the fish cause it was literally falling apart (still moist and tasty, but fillet didn’t hold together too well). Needs more spices in the rub. Slightly less kimchi, slightly more rosemary.
Sidenote, today I discovered provolone and fried haddock and provolone and kimchi work well together. Note for the future.
There is a sort of American equivalent to Yorkshire pudding, they call them pop overs though traditional Yorkshire pudding tends to be more dense.
But that’s not a real meal without the gravy.
